Creamy and delicious root vegetable soup
Curried Root Vegetable Soup is a fabulous mix of onion, garlic, ginger, swede, parsnip, carrot, potato and curry spices. A totally delicious warming soup! This is a hearty, thick soup with a little bit of heat from the curry. I've used this combination of vegetables a few times with great success, but using earthy tubers. Substitute g turnips, or up the other vegetables slightly, and so on. This is just a great basic recipe for creating a tasty, satisfying soup and I do hope you'll. Curry powder adds great depth of flavor to this creamy, fall-inspired root vegetable soup. It's also vegan and gluten free!
